Pastis Cocktails

pernod3.jpgAlthough it is consumed throughout France, especially in the summer, pastis is generally associated with southeastern  France, especially with the city of Marseille, and with the clichés of the Provençal lifestyle, like pétanque (boules).  Aniseed is an acquired taste – you either love it or you hate it.  I must admit that my taste is to the latter.  I tried a tomate in the Dordogne once when I was a teenager.  I was desperate as there was not a cold beer in sight.  It looked more like a dessert than a drink, being a pale blancmange pink in colour with the remnants of the grenadine lying blood red in the bottom of the glass.  After drinking it I was straight off to the water fountain to try and get rid of the taste!

You may have come across some of the well known cocktails which use pastis and syrups:

The perroquet (parrot) with green mint syrup

The tomate (tomato) with grenadine syrup

T
he mauresque (moorish) with orgeat syrup.
