‘Pauillac’ is unique in the UK and exclusive to Bordeaux-Undiscovered. This is a Declassified Bordeaux from top a flight, prestigious Grand Cru Classe Chateau. The keyword to remember here is ‘prestigious’. As Declassified Bordeaux is made anonymously by high ranking chateaux we can not tell you who made it. We do know where the wine comes from but we must keep silence. What we can say is that’Pauillac’ hails from a top class vineyard on prime terroir in the south of the Pauillac appellation, between the First Growth (Premier Cru) Chateaux Latour, Pichon-Longueville and Lynch Bages.
Declassified Bordeaux produced by these top chateaux have certain advantages; they benefit from state of the art wine making, the best experts and oenologists money can buy, cutting edge technology and immaculately managed vineyards lying on the best terroir. In short these wines are made to the highest standards – they are among the aristocrats of the wine world.
‘Pauillac’ is made by the same team that produce the Grand Cru Classe’s flagship wines. This means that this wine is made with the same level of expertise. The wine is also normally made from the same vineyard so it has the same pedigree and provenance . . . but is a fraction the price.
The Pauillac AOC has been hailed as a legendary as it is home to no less than 3 First Growth Chateaux (Premier Crus) out of the 5 in Bordeaux as well as having 15 Grand Crus Classés within its boundaries. Often described as elegant and polished, Pauillac’s wines are amongst Bordeaux’s most elite.
An insider’s choice, ‘Pauillac’ is a classic wine made to an exceptionally high standard. It bears the coat of arms of Pauillac on its label. The sailing ship represents the ancient harbour and the name Pauillacus underneath on the banner represents the Roman nobleman who gave his name to the town.
‘Pauillac’ pairs beautifully with pink lamb, moist roast pork, duck and veal. It’s also great with gamey tasting fowl such as goose, quail and pigeon.
