This blend is a marriage made in heaven using one of France’s best kept secrets. Blends of Pinot Noir and Syrah (Shiraz) have created some of France’s greatest wines in days long past but this was always kept quiet. Before the 1900s it was common place for Burgundy producers to marry their top notch Pinots with Syrah from the Rhone Valley. The Syrah was added to add depth, colour, fruit and strength to the light bodied Pinot. The marriage of the two grapes takes a lot of skill as its a tricky business getting the balance right. Powerful Syrah can easily overwhelm the ethereal Pinot Noir, swamping Pinot’s lovely aromas and smooth tannins. It takes a master blender to accomplish a polished Pinot Syrah blend – it’s a difficult challenge to take on – and that’s where Christopher Rethore and his cousin Jean-Michel Davy step to the fore.
Their Pinot and Syrah grapes are grown at high altitude (4400 feet) at their Domaine Rethore Davy in the Loire Valley. The soil is dry and lies over a bedrock of schists on south facing slopes exposed to the wind overlooking Montrevault and the river Evre on the hillsides of Mauges. Precision, careful management and vision go into the making of Temps d’M Pinot Noir & Syrah – the grapes are delicately pressed to extract silky tannins and gently given a second fermentation in oak barrels before the final blend in made. Their aim is to capture the best expressions of Pinot Noir and Syrah and create a wine that embodies the spirit of Mauges. The message in each bottle should stand out – that this is a high quality wine, beautifully made, from a great terroir.
Temps d’M is a beautiful wine to enjoy with friends or whilst relaxing alone but it’s also great with full flavoured food; especially rare steak, duck, pigeon, lamb, liver or venison. It pairs well with Chinese cuisine using soy sauce and braised dishes. Try it with a good mature, sharp cheese too!
